Healthy & Delicious: Black Bean Soup Recipe
- 2 tablespoons canola or vegetable oil
- 1 medium onion, finely chopped
- 1 medium shallot, chopped
- 3 large cloves garlic, minced
- 1 tablespoon chili powder
- 1 (15-ounce) can low sodium chicken broth
- 1 (15-ounce) can black beans, drained and rinsed
- 3/4 cup pink beans, drained and rinsed
- 1 medium lime, juiced
- Kosher salt
- Freshly ground black pepper
- A few ounces 2% cheddar cheese, grated (optional, but preferred)
- In medium saucepan, heat oil over medium heat. Add onion and shallot. Saute until starting to soften, about 5 minutes. Add garlic and chili powder and cook 1 minute, stirring frequently. Add black beans, pink beans, and broth. Stir to combine. Bring to a boil. Reduce to a simmer and cook 20 minutes.
- In a blender or with an immersion blender, carefully puree about half of soup until smooth. Return to pot and stir to combine. Add lime juice and season with salt and pepper to taste. Serve immediately, with cheese sprinkled over top.
