Yellow Velvet Cake
- 1 1/2 c. oil
- 1 1/2 c. sugar
- 3 eggs
- 1 c. buttermilk
- 2 c. self-rising flour
- 1 tsp. soda
- 1 tsp. vanilla
- yellow food coloring
- 1 c. nuts
- 1 c. milk
- 1/4 c. flour
- 1 c. sugar
- 1/2 tsp. salt
- 1 c. oil
- 1 c. coconut
- Mix 1 1/2 cups oil, 1 1/2 cups sugar and eggs.
- Beat until well blended.
- Add the soda with the buttermilk, alternating with the 2 cups flour.
- Mix well, then add the vanilla and a few drops of yellow food coloring.
- Pour this into a 13 x 9-inch pan.
- Bake at 325u0b0 for 35 minutes.
- While the cake is cooling, combine the remaining ingredients.
- Cook in a double boiler until thick. Spread on cake when the cake has cooled.
