Layered Fruit 'N' Cheese Dessert Squares(Makes 15 Servings)
- 2 c. unsifted flour
- 2/3 c. firmly packed brown sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. peanut butter
- 4 eggs
- 12 oz. cream cheese, softened
- 1 (14 oz.) can Eagle Brand sweetened condensed milk (not evaporated milk)
- 1 c. strawberry, peach or cherry preserves
- 1 c. graham cracker crumbs
- 1/4 c. finely chopped pecans or walnuts
- 2 Tbsp. all-purpose flour
- 1 Tbsp. sugar
- 1/3 c. margarine or butter, melted
- 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1 tsp. unflavored gelatin
- 1 1/3 c. milk
- 1 1/2 c. dairy sour cream
- 1 Tbsp. vanilla
- 3 c. blueberries, raspberries, and/or small whole strawberries
- fresh berries (optional)
- For crust, in a small bowl, combine cracker crumbs, pecans or walnuts, flour and the 1 tablespoon sugar.
- Stir in the melted margarine or butter.
- Toss to mix well.
- Press mixture onto the bottom and up sides of a 9-inch pie plate.
- Bake in a 375u0b0 oven for 8 minutes.
- Cool on a wire rack.
