Delicious Pizza-Flavored Vegetable Soup
- 1 onion, thinly slivered
- 1 clove garlic, minced
- 1 (28 oz.) can tomatoes (and their liquid)
- 3 1/2 c. beef broth
- 2 c. water
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 medium potatoes, cubed
- 1 lb. green beans, cooked
- 2 c. spaghetti or spaghetti squash
- 1/2 c. nonfat Parmesan cheese
- 3 Tbsp. olive oil
- 3 cloves garlic, minced
- 1/2 c. chopped parsley
- 2 Tbsp. dried basil
- 1/4 tsp. salt
- 1/4 tsp. sugar
- Place onion, garlic, undrained tomatoes, broth, water, salt, pepper and potatoes in a large soup pot.
- Bring to a boil.
- Cover and simmer for 1 hour.
- Add spaghetti or squash.
- Boil, stirring occasionally, until spaghetti is tender, about 10 minutes.
- Add beans and heat through.
- Gradually add cheese 2 tablespoons at a time, stirring after each addition.
- In a blender, process remaining ingredients until smooth, adding 1 tablespoon water if needed.
- Pour this mixture into the soup and stir.
