Lean Pork And Rice Veggie Bake
- 6 (1/2-inch) pork steaks, trimmed of all visible fat
- 1 c. diced onions
- 1 c. diced green peppers
- 2 c. diced fresh mushrooms or canned
- 1 c. diced celery
- 1 c. diced carrots
- 1 c. rice (uncooked; long grain)
- 1 (8 oz.) can plain tomato sauce
- 2 1/2 c. hot water
- 2 envelopes "French's" or "Instant Swiss" brand pork gravy mix
- 1 Tbsp. diet margarine
- pepper and salt
- Brown meat on both sides in frying pan with Pam.
- Add next 5 ingredients to pan, stirring constantly for 5 minutes at simmer. Then add dry gravy mixes, water and tomato sauce.
- Simmer approximately 3 to 5 minutes, stirring constantly.
- Place 1 layer of pork steak in 9 x 13 casserole, then layer of rice and vegetables.
- Top layer to be steaks.
- Cover with foil and bake at 300u0b0 for 1 1/2 hours.
- Meat will fall off bone and rice will be plump and moist.
- Delicious!
- Add applesauce and green beans and you have a great meal.
- Makes 6 servings.
