Shrimp And Rice Recipe
- 1 stick oleo
- 1 c. chopped onions
- 1 c. green peppers
- 1 c. chopped celery
- 2 cloves garlic, finely chopped
- 1/3 c. parsley
- 1 small jar pimento and juice
- 1 c. chopped green onions
- 1 can cream of mushroom soup
- 1 can Cheddar cheese soup
- 3 c. shrimp, crayfish or crab meat
- 2 c. cooked rice
- 1/4 c. plus 1 Tbsp. Italian bread crumbs
- 2 Tbsp. Tabasco
- 1 tsp. black pepper
- 1 tsp. salt
- Saute first 4 ingredients in oleo.
- Add soups, parsley, shrimp, green onions and pimento.
- Heat through.
- Stir in rice and bread crumbs (1/4 cup).
- Put into 3-quart casserole.
- Sprinkle 1 tablespoon bread crumbs on top.
- Bake at 350u0b0 for 30 minutes or until brown.
- Can make ahead, freeze, bake and serve.
