Baked Spareribs And Sauerkraut
- 4 1/2 lb. ribs
- 1/2 Tbsp. salt
- 1/2 tsp. pepper
- 2 (1 lb. 11 oz. each) cans sauerkraut
- 2 c. (about 3/4 lb.) diced green apples
- 1/2 Tbsp. caraway seed
- 1/2 tsp. pepper
- 3/4 c. diced onion (about 1/2 lb.)
- Cut ribs into 2 to 3 rib pieces.
- Put in a large roasting pan and sprinkle with salt and pepper. Roast in a 450u0b0 oven for about 1/2 hour, turning ribs occasionally until brown.
- Reduce heat to 350u0b0. Cook 1 hour longer, not covered.
- Remove from oven and drain off fat.
- Add undrained sauerkraut, apples, caraway seed, pepper and onion to the ribs. Cover.
- Continue roasting at 350u0b0 until ribs are tender and meat will slip easily from the bones, about 1 hour. Add water, if necessary, during last of cooking.
