Sloppy Joes With Carrot-Jalapeño Slaw Recipe

  1. Make the sloppy-joe mixture: In a large saute pan or cast-iron pan over medium-high heat, warm canola oil.
  2. Add the onion and saute a few minutes until translucent, stirring constantly. Add garlic and green chiles, stirring to mix with the onion. Increase the heat to high and add ground meat, salt and pepper.
  3. Break up crumbled meat, and stir occasionally to make sure all the meat is cooked, approximately 3 to 5 minutes.
  4. Lower the heat to medium-low, add canned tomatoes, barbecue sauce, ketchup, mustard, brown sugar and cayenne powder. Stir to combine sauce with the meat, and let simmer until the sauce has reduced and thickened, about 10 to 12 minutes.
  5. Meanwhile, make the slaw: Using a box grater set over a medium bowl, grate carrots, jalapenos and onion. Add salt to taste, and combine with enough sour cream to hold the slaw together.
  6. Heap sloppy-joe mixture on top of the hamburger bun bottoms. Garnish sloppy joes with slaw, add the bun top, and serve.
