Marble Cheesecake
- 4 (8 oz.) pkg. cream cheese, softened
- 1 c. sugar
- 2 tsp. vanilla extract
- 3/4 tsp. lemon flavoring
- 4 eggs, slightly beaten
- 3 egg yolks, slightly beaten
- 3/4 c. heavy cream
- 6 oz. semi-sweet chocolate, melted
- 1/2 c. milk
- 4 chocolate wafers, crushed (about 1/4 c.)
- 2 c. Thick Yogurt
- 1 (8 oz.) pkg. Neufchatel cheese, softened
- 2/3 c. sugar
- 1/4 c. skim milk
- 2 Tbsp. all-purpose flour
- 2 tsp. vanilla
- 3 egg whites or 1/2 c. cholesterol-free egg product
- 1 Tbsp. cocoa
- 1 tsp. chocolate extract
- Raspberry Topping
- Heat oven to 300u0b0.
- Spray a spring-form pan, 9 x 3-inches, with nonstick cooking spray.
- Sprinkle chocolate wafer crumbs on bottom of pan.
- Beat Thick Yogurt and cheese in medium bowl on medium speed until smooth.
- Add sugar, milk, flour, vanilla and egg whites.
- Beat on medium speed about 2 minutes or until smooth.
