Muttie'S Lemon Bars
- 1 c. butter
- 1 c. sugar
- 1/2 c. milk
- 1 egg, beaten
- 1 c. chopped walnuts
- 1 c. coconut
- 1 c. graham cracker crumbs
- graham crackers (whole)
- 1/2 c. butter
- 2 c. confectioners sugar
- 1 tsp. vanilla
- 1 lemon
- Grease a 9 x 13-inch pan.
- Line with one layer of graham crackers.
- Mix butter, sugar, milk and egg in saucepan.
- Boil for 1 to 2 minutes, stirring constantly.
- Remove from heat and add walnuts, coconut and crushed graham crackers.
- Pour over single layer of graham crackers.
- Cover mixture with another layer of graham crackers.
- Make frosting by mixing 1/2 cup butter, confectioners sugar, vanilla and the juice of lemon until smooth. Frost top layer of graham crackers.
- Chill 6 hours or overnight. Cut into 6 bars.
