Southwest Spaghetti Pie
- 8 oz. spaghetti
- 1/2 c. 2% low-fat milk
- 1 egg
- 1 lb. lean ground pork
- 1 c. chopped onion
- 1 chopped green bell pepper
- 1 large garlic clove, minced
- 1 Tbsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 16 oz. can tomato sauce
- 4 oz. jalapeno pepper Monterey Jack cheese
- 4 oz. grated Cheddar cheese
- Preheat oven to 425u0b0.
- Cook pasta according to package directions.
- Whisk together the milk and egg; mix in the hot pasta. Spread the mixture in a buttered 9 x 13-inch baking dish.
- Cook the pork, onion, green pepper and garlic together in a large skillet for about 6 minutes over medium heat, until the pork is cooked through.
- Drain or spoon off excess fat.
- Stir the chili powder, cumin, oregano, salt and black pepper into the pork and cook for about 2 minutes.
- Stir in the tomato sauce and cook for 2 minutes more.
