Italian Pot Roast
- 3 lb. lean rump roast
- 1 (16 oz.) can tomato paste
- 1 Tbsp. olive oil
- 1 tsp. salt
- 2 cloves garlic
- 1/2 tsp. pepper
- 1 large onion, chopped
- 1 tsp. oregano
- 1 green pepper, diced
- 2 stalks celery, diced
- 1 tsp. basil
- 1 tsp. paprika
- 1 (28 oz.) can Italian tomatoes, cut up
- 1 tsp. parsley, diced
- 1 box spaghetti
- In large skillet, saute onions, celery, green peppers, and garlic in olive oil.
- Add tomatoes, tomato paste and seasoning. Cover and simmer for 20 minutes.
- Brown meat in oil in a Dutch oven.
- Add mixture to meat.
- Simmer in oven at 350u0b0 for 2 to 3 hours.
- Turn meat often.
- Cook spaghetti and place around roast. Serve with sauce from meat pan.
