Simmered Chinese Chicken
- 4 whole chicken legs and thighs
- 1 Tbsp. oil
- 1/3 c. soy sauce
- 1/3 c. brown sugar
- 1/2 c. water
- 1 Tbsp. catsup
- 1/4 c. dry sherry
- dash of two of Tabasco sauce
- 1 garlic clove, minced
- 4 green onions, sliced
- 2 Tbsp. cornstarch
- 2 Tbsp. water
- 2 tsp. toasted sesame seed (toast seed in shallow pan at 350~ for 8 minutes, watch closely)
- Heat oil in Dutch oven and brown chicken on all sides.
- Mix together soy sauce, brown sugar, water, catsup, sherry, Tabasco sauce, garlic and green onion.
- Pour mixture over chicken.
- Cover, simmer 35 to 45 minutes.
- Remove chicken to platter.
- Thicken pan juices with the cornstarch mixture.
- Cook, stirring constantly, until thickened.
- Spoon some sauce over chicken, sprinkle with sesame seed.
- Serve chicken with remaining sauce.
- Makes 4 servings.
