Morrilyn'S First Prize Chili
- 1/4 c. olive oil
- 1 large red onion, chopped
- 1 large bell pepper, chopped
- 2 1/2 lb. tri tip, cubed
- 3 cloves garlic, minced
- 2 tsp. dry leaf oregano
- 2 tsp. dry leaf basil
- 3 Tbsp. chili powder (to taste)
- 1 1/2 Tbsp. ground cumin
- 1 Tbsp. sugar
- 3 (15 oz.) cans tomato sauce
- 1 (10 oz.) can La Paz red chili sauce
- 2 (28 oz.) cans diced tomatoes
- 1 (27 oz.) can kidney beans
- 2 (15 oz.) cans pinto beans
- 8 oz. pkg. frozen white corn
- 2 (2 1/4 oz.) cans sliced olives
- Heat oil in large stock pot.
- Brown onion, pepper, trip tip and garlic.
- Add spices and sugar.
- Saute about 3 minutes.
- Stir in tomato sauce, red chili sauce and drained tomatoes.
- Simmer over low heat about 2 hours.
- Add drained beans, corn and olives. Simmer about 1 more hour.
