Sicilian Meat Roll

  1. In a large bowl, combine eggs, tomato juice, oregano, garlic, salt and pepper.
  2. Add beef, bread crumbs and parsley; mix well. On a piece of heavy-duty foil, pat meat mixture into a 12 inch x 10 inch rectangle.
  3. Place the ham and shredded cheese on loaf to within 1/2 inch of edges.
  4. Roll up, jelly-roll style, beginning with the short end and peeling foil away while rolling.
  5. Place on a greased baking pan with seam side down; seal ends.
  6. Bake, uncovered, at 350u0b0 for 1 hour and 10 minutes.
  7. Top with sliced cheese; bake 5 minutes longer or until cheese is melted.
