Chicken Gumbo

  1. Cook chicken breast in broth and water at least 1 hour.
  2. Remove from heat and let cool to skin, bone and dice (bite sized).
  3. Add all ingredients to soup.
  4. Add okra, cut in bite size pieces.
  5. Cook sausage meat (in small pieces) and add flour to make a roux.
  6. Add to soup.
  7. Simmer about 1 1/2 hours.
  8. Add rice last 15 minutes.
  9. If too thick, add another can chicken broth.
  10. If too thin, add more rice.
