Picante Chicken Casserole
- 1 Tbsp. olive oil
- 1/2 c. sliced green onion
- 2 c. sliced, fresh mushrooms
- 1 (4 oz.) can diced green chiles (Ortega)
- 1 1/2 c. mild picante sauce
- 12 oz. cooked chicken, shredded
- 2 c. cooked rice
- 6 Tbsp. lite sour cream
- 4 oz. grated Cheddar cheese
- paprika
- Heat oil and saute mushrooms and onion.
- Stir in chiles and picante
- sauce.
- Cook

- over
- medium
- heat for 5 minutes.
- In
- a casserole, place chicken in the bottom.
- Cover with all but
- 1/2 cup of the sauce.
- Bake at 350u0b0 for 20 to 30 minutes. Combine rice, sour cream and 1/2 cup of the sauce and spread
- over
- chicken.
- Sprinkle
- on cheese and paprika.
- Heat for 15tinutes more or until cheese melts.
- Healthy.
- Makes 4 servings.
