Bourbon-Pecan Bread
- 1/4 c. butter or margarine, softened
- 1 c. sugar
- 1 large egg
- 1 c. milk
- 1/2 c. bourbon
- 3 c. all-purpose flour
- 1 Tbsp. baking powder
- 1 1/2 tsp. salt
- 1 1/2 c. chopped pecans
- 2 tsp. grated orange rind
- 2 Tbsp. bourbon
- Beat butter at medium speed with an electric mixer until creamy.
- Gradually add sugar, beating well.
- Add egg, beating well.
- Combine milk and 1/2 cup bourbon.
- Combine flour, baking powder and salt.
- Add to butter mixture alternately with milk mixture, beginning and ending with flour mixture.
- Stir in 1 1/4 cups pecans and orange rind.
- Spoon batter into a greased and floured 9 x 5 x 3-inch loaf pan.
- Sprinkle with remaining pecans. Bake at 350u0b0 for 1 hour and 10 minutes.
- Drizzle with 2 tablespoons bourbon.
- Cool in pan on a wire rack.
