Bourbon-Pecan Bread

  1. Beat butter at medium speed with an electric mixer until creamy.
  2. Gradually add sugar, beating well.
  3. Add egg, beating well.
  4. Combine milk and 1/2 cup bourbon.
  5. Combine flour, baking powder and salt.
  6. Add to butter mixture alternately with milk mixture, beginning and ending with flour mixture.
  7. Stir in 1 1/4 cups pecans and orange rind.
  8. Spoon batter into a greased and floured 9 x 5 x 3-inch loaf pan.
  9. Sprinkle with remaining pecans. Bake at 350u0b0 for 1 hour and 10 minutes.
  10. Drizzle with 2 tablespoons bourbon.
  11. Cool in pan on a wire rack.
