Lemon Snowball

  1. Line a 12 cup bowl with 2 pieces of waxed paper, one on top of other crosswise.
  2. Set bowl aside.
  3. In a large bowl, sprinkle gelatin over cold water.
  4. Let stand 5 minutes.
  5. Add boiling water, stir until dissolved.
  6. Stir in granulated sugar, salt, orange juice concentrate, lemon juice and peel.
  7. Refrigerate 45 minutes to 1 hour, stirring occasionally, until partially set and mixture mounds when dropped from a spoon.
