Stuffed Bell Peppers
- 12 bell peppers
- 2 large onions
- 4 ribs celery
- 1 bell pepper
- 3 cloves garlic
- 1 Tbsp. garlic
- 1 tsp. thyme
- 2 bay leaves
- 1 lb. ground round
- 1 lb. ground pork
- 1 piece ham, diced
- 3 cans potted meat
- Italian bread crumbs
- salt and pepper to taste
- oil
- Cut bell peppers in half and clean.
- Parboil the peppers until tender, saving some of the water.
- Put peppers aside to drain. Chop all vegetables and place in a large pot with oil.
- Saute vegetables until clear.
- Put ground round, ground pork and ham in pot.
- Cook until brown.
- Drain off excess grease.
- Put in potted meat.
- Salt and pepper to taste.
- Cook on low heat for about 1 hour.
- Turn off.
- Add bread crumbs to dressing.
- If too stiff, add water from peppers.
- Take pepper shells and stuff with dressing. Dust with bread crumbs and dot with butter.
- Bake until hot.
