Oriental Chicken Salad

  1. Combine the chicken, red pepper, jicama, water chestnuts and scallions in a large mixing bowl.
  2. Add snow peas and cashews. Process the parsley and garlic in a food processor.
  3. Add the teriyaki sauce, sesame oil, safflower oil, sesame paste, vinegar, sherry, brown sugar, coriander and chili oil, if desired.
  4. Process until smooth.
  5. Pour the dressing onto the salad and toss thoroughly.
  6. Sprinkle with the sesame seeds.
  7. Refrigerate several hours before serving.
  8. Makes 6 to 8 portions.
  9. (I used 10 cups chicken and 1 1/2 portions of the remaining ingredients.)
