Tex Mex Strata
- 3 medium ripe avocados, peeled and pitted
- 4 Tbsp. lemon juice
- 1/2 tsp. salt or more to taste
- 4 drops Tabasco sauce
- 1/4 tsp. pepper
- 8 oz. sour cream
- 1/2 c. mayonnaise
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 2 (10 oz.) cans jalapeno bean dip
- 1 large bunch green onions, chopped
- 3 medium size tomatoes, seeded and coarsely chopped
- 2 (3 1/2 oz.) cans pitted ripe olives, drained and coarsely chopped
- 16 oz. sharp Cheddar cheese, grated
- round tortilla chips
- In medium size bowl, mash avocados.
- Add lemon juice, salt, Tabasco sauce and pepper.
- In another bowl, combine sour cream, mayonnaise and taco mix.
- In a 9 x 13-inch glass casserole, spread the bean dip in a layer.
- Next, spread the avocado mixture, then the sour cream mixture.
- Sprinkle with the green onions, chopped tomatoes and chopped olives.
- Cover top with the cheese. Refrigerate until serving time.
- Use tortilla chips for dipping.
