German Potato Salad
- 1 Tbsp. flour
- 1/4 c. cider vinegar
- 1/3 tsp. white pepper
- 6 medium warm boiled potatoes, peeled and cubed
- 1/2 minced yellow onion
- 1/2 c. sweet green bell pepper
- 1 c. coarsely chopped celery
- 3 to 4 slices crisp cooked bacon
- 4 hard-cooked eggs, peeled and diced
- 3/4 c. cold water
- 2 Tbsp. sugar
- 2/3 Tbsp. salt
- Blend flour and 2 tablespoons water in a small saucepan; add remaining water, vinegar, sugar, pepper and 2 teaspoons salt.
- Stir until mixture boils.
- Place potatoes, onion, green pepper and celery in a large bowl and toss lightly.
- Pour in hot dressing and mix well.
- Cool to room temperature; add crumbled bacon and eggs. Toss again.
- Taste for salt; add more if needed.
- Serve at room temperature.
- Serves 6, about 250 calories per serving.
