Grilled Crabcakes
- 1 lb. crabmeat, picked, over, cartilage discarded and any liquids squeezed out
- 1/4 c. fine bread crumbs
- 1 egg, beaten
- 1 Tbsp. mayonnaise
- 1/2 tsp. (or to taste) Worcestershire sauce
- 1/2 tsp. dry mustard
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 3 Tbsp. minced fresh parsley
- all-purpose flour
- 2 eggs, slightly beaten
- bread crumbs
- oil for greasing grill
- 2 to 3 c. parsley sprigs to spread on grill
- Mustard Sauce
- Prepare crabcakes:
- Combine crab, 1/4 cup fine bread crumbs, egg, mayonnaise, Worcestershire sauce, mustard, salt, pepper and the 3 tablespoons minced parsley in a deep bowl.
- Form into six firm patties.
- Roll patties in flour, then dip into the beaten eggs.
- Roll in bread crumbs.
