Papa Jim'S Meatloaf
- 2 lbs. ground beef
- 1 tsp. garlic powder
- salt and pepper to taste
- 1 (4-oz) can chopped green chiles
- 1 (4-oz) can mushrooms, reserve liquid
- 2 eggs
- 8 to 10 saltine crackers, crushed
- 1 small onion, chopped
- 2/3 cup ketchup
- 3 slices bacon
- In small bowl, mix together ketchup and reserved liquid from mushrooms and set aside.
- In large bowl, mix together ground beef, spices, green chiles, mushrooms, eggs, crackers and onion.
- Mix thoroughly (using your hands is easiest).
- Form into a loaf and put in large loaf pan.
- Lay bacon slices on top of loaf.
- Pour ketchup mixture on top of bacon.
- You may use the new pans that have holes to drain fat from the pan.
- Bake in oven at 325 degrees for 50 minutes.
- Serves 8.
