Cheese Cake(Serves 12)

  1. Mix zwieback with 1/2 cup sugar, cinnamon and butter or shortening.
  2. Set aside 3/4 cup to sprinkle on top; press remainder of crumbs into a 9-inch spring-form pan, lining bottom and sides. Beat eggs with remaining 1 cup sugar until light; add salt, lemon juice and rind, cream, cheese and flour; beat thoroughly and strain through a fine sieve.
  3. Pour into lined pan; sprinkle with remaining crumbs and nut meats.
  4. Bake in a moderate oven (350u0b0) about 1 hour or until center is firm.
  5. Turn off heat, open oven door and let stand in oven 1 hour or until cooled.
