Sweet Potato Salad
- 5 c. water
- 1 1/2 lb. sweet potatoes
- 2 medium stalks celery, thinly sliced (about 1 c.)
- 1 small onion, thinly sliced
- 1 medium orange, peeled and sectioned
- 1/2 c. mayonnaise/salad dressing
- 1 to 2 Tbsp. orange/pineapple juice
- 1/2 tsp. dry mustard
- 1/2 tsp. grated orange peel
- 1/4 tsp. salt
- 1/4 tsp. ground ginger
- 1/8 tsp. pepper
- lettuce leaves
- Heat water to boiling; add potatoes.
- Heat to boiling, then reduce heat.
- Cover and simmer until tender, 30 to 35 minutes. Drain potatoes; slip off skins.
- Cut potatoes into 1/2-inch cubes. Add celery, onion and orange.
- Mix remaining ingredients, except lettuce leaves; pour on vegetables and orange.
- Stir to blend. Refrigerate at least 2 hours.
- Serve in lettuce-lined bowls. Makes 4 to 6 servings.
