Sweet Potato Salad

  1. Heat water to boiling; add potatoes.
  2. Heat to boiling, then reduce heat.
  3. Cover and simmer until tender, 30 to 35 minutes. Drain potatoes; slip off skins.
  4. Cut potatoes into 1/2-inch cubes. Add celery, onion and orange.
  5. Mix remaining ingredients, except lettuce leaves; pour on vegetables and orange.
  6. Stir to blend. Refrigerate at least 2 hours.
  7. Serve in lettuce-lined bowls. Makes 4 to 6 servings.
