Flourless Chocolate Cake
- 2 c. (12 oz.) semi-sweet chocolate chips
- 1/2 c. butter
- 1/4 c. sugar
- 1/4 c. water
- 1 tsp. instant coffee granules
- 3 eggs, lightly beaten
- whipped topping (optional)
- Preheat oven to 425u0b0.
- Butter the bottom and sides of a 9-inch pie plate.
- Place a 12 x 12-inch sheet of waxed paper in the pie plate and butter the waxed paper.
- In a medium saucepan, combine chocolate chips, butter, sugar, water and coffee granules. Heat over medium heat 2 to 3 minutes or until mixture is melted and smooth, stirring constantly.
- Remove from heat and allow to cool slightly.
- Stir in eggs until mixture is smooth.
- Pour into pie plate.
- Bake 10 minutes; the cake will not be completely set in the middle.
- Cool. Cover loosely, then chill 6 to 8 hours or overnight.
