Different Chicken Salad
- 1/2 pkg. (6 oz.) No Yolk noodles
- 1 c. (8 oz.) lemon low-fat yogurt
- 1/2 c. reduced-calorie cholesterol free mayonnaise
- 2 tsp. curry powder
- 1/4 tsp. ground ginger
- 1/2 tsp. salt
- 2 c. (about 8 oz.) bite-size cooked chicken pieces
- 1 (11 oz.) can mandarin oranges, drained
- 1 1/2 c. seedless red or green grapes
- 1 c. thinly sliced celery
- 1/2 c. finely chopped red onion
- Cook noodles according to package directions without salt. Meanwhile, combine yogurt, mayonnaise, curry powder, salt and ground ginger in a large bowl.
- Add chicken, oranges, grapes, celery and onion to dressing mixture.
- Drain noodles and add to chicken mixture; toss gently to combine.
- Cover and refrigerate 1 hour before serving.
- Makes 8 (1 cup) servings.
- Contains 305 calories and 8 g fat per serving.
