Eiou Gumbo(You Invite Everyone Over)
- 1 (4 to 5 lb.) hen or broiler
- 1 gal. water
- 1 large pkg. seafood seasoning
- 1 c. oil
- 2 c. flour
- 5 c. chopped green onions
- 3 white onions, chopped
- 5 c. chopped celery
- 3 bell peppers, chopped
- 4 Tbsp. Red Hot
- 4 Tbsp. Tony Chachere seasoning
- 1 bunch parsley, chopped and stems removed
- 1 gal. tomatoes, chopped
- 2 lb. sliced okra
- 1 bottle Kitchen Bouquet
- 3 whole garlic, pressed
- 5 Tbsp. Worcestershire sauce
- 1 lb. shrimp, peeled and deveined
- 3 lb. fresh fish, chopped
- 2 pt. oysters
- scallops and crabs (optional)
- In large gumbo pot, cook chicken in water with seafood seasoning.
- When tender, remove chicken, cool, debone and chop. In skillet, make a roux.
- Slowly brown flour in oil to a dark chocolate color, stirring constantly.
- Add all vegetables, except okra and tomatoes.
- When vegetables are clear, add to stock water. Add okra and tomatoes.
- Remove seasoning packet; add remaining seasonings.
- Simmer for 1 hour.
- Add cooked chicken, fish and seafood to mixture.
- Cook for 30 minutes.
- Serve over rice.
- You need a big gumbo pot for this.
