Zucchini Lasagna(Microwave)
- 6 c. sliced zucchini
- 1 lb. ground beef
- 1 (6 oz.) tomato paste
- 1/2 tsp. basil
- 1/2 tsp. leaf oregano
- 1/2 tsp. salt
- 1/8 tsp. garlic powder
- 1 c. cottage cheese
- 1 egg
- 1/4 c. dry bread crumbs
- 2 c. shredded Mozzarella cheese
- Place zucchini in 2-quart casserole.
- Cook, covered, on Full power for 7 to 10 minutes or until zucchini is thoroughly cooked. Stir halfway through cooking time.
- Drain.
- Set aside.
- Place ground beef in 1-quart casserole.
- Cook on Full power for 4 to 5 1/2 minutes or until beef is no longer pink.
- Stir halfway through cooking time.
- Drain.
- Add tomato paste, basil, oregano, salt and garlic powder to beef.
- Set aside.
- Combine cottage cheese and egg in small bowl.
