Quick And Easy Lemon Pie

  1. Soften gelatin in 1/2 cup water in a large saucepan.
  2. Stir in remaining 1 1/2 cups water, pudding mix and sugar.
  3. Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
  4. Chill until mixture mounds from spoon.
  5. Pour Carnation into ice cube tray or 8-inch metal cake pan.
  6. Chill in freezer compartment until sift ice crystals form around edges of tray (10 to 15 minutes).
  7. Whip until stiff (about 1 minute).
  8. Add lemon juice.
  9. Whip very stiff (about 2 minutes longer).
  10. Fold into cooled pudding.
  11. (If pudding is lumpy, beat until smooth.)
  12. Spoon into pie shell; swirl top.
  13. Chill 2 hours or until firm.
