Sesame Chicken With Noodles
- 4 chicken breast halves, skinned and boned
- 1/4 c. firmly packed light brown sugar
- 1/3 c. soy sauce
- 1/4 c. dry sherry
- 2 Tbsp. white wine vinegar
- 2 Tbsp. sesame oil
- 1 tsp. minced fresh ginger
- 1 clove garlic, minced
- 1/4 tsp. pepper
- 1/4 tsp. ground red pepper
- 2 tsp. cornstarch
- 1 sweet red pepper, cut into strips
- 1/4 c. sliced scallions or green onions
- 1 c. shredded red cabbage
- 1/2 c. coarsely chopped walnuts
- 2 Tbsp. sesame seed
- 2 Tbsp. minced fresh parsley
- 8 oz. cooked spinach noodles or egg noodles
- Cut chicken into 3 x 1/2-inch strips; set aside.
- Combine brown sugar and the next 8 ingredients in a 2-quart shallow casserole. Add chicken; toss gently to coat.
- Cover and chill 30 minutes. Drain chicken, reserving 1/4 cup marinade.
- Return chicken to casserole.
- Combine reserved marinade and cornstarch; pour over chicken and toss.
- Cover with heavy-duty plastic wrap, turning back one corner to vent.
- Microwave at High 5 minutes.
- Stir in sweet red pepper and scallions.
- Cover with plastic wrap, venting corner.
- Microwave at High 2 to 3 minutes, or until chicken is done.
- Stir in cabbage and remaining ingredients, except noodles. Cover; let stand 1 minute.
- Serve over noodles.
- Yields 4 servings.
