Autumn Bisque
- 1/2 c. chopped leek
- 1/2 c. chopped onion
- 1/2 c. finely chopped celery
- 2 large apples, chopped
- 1/4 c. butter
- 2 Tbsp. flour
- 1 c. grated Cheddar cheese
- 1/2 c. light cream
- 7 c. chicken or turkey stock
- 4 c. peeled, diced butternut squash
- 1 tsp. thyme
- 1 tsp. salt
- 1/2 tsp. sage
- 1/4 tsp. turmeric
- 1/4 tsp. rosemary
- pinch of nutmeg
- pepper to taste
- Saute vegetables and apples in butter.
- Stir in flour and cook.
- Add stock and simmer 10 minutes.
- Add squash and cook.
- Add seasonings.
- Add cider and cream; heat through.
- Remove from heat. Stir in cheeses.
- Garnish with croutons.
