Autumn Bisque

  1. Saute vegetables and apples in butter.
  2. Stir in flour and cook.
  3. Add stock and simmer 10 minutes.
  4. Add squash and cook.
  5. Add seasonings.
  6. Add cider and cream; heat through.
  7. Remove from heat. Stir in cheeses.
  8. Garnish with croutons.
