Divinity Pumpkin Pie
- 2/3 c. sugar
- 1 c. cornstarch
- 1 tsp. cinnamon
- 2 c. miniature marshmallows
- 1/2 tsp. nutmeg
- 3/4 tsp. salt
- 1 baked 9-inch pie shell
- sweetened whipped cream (optional) or beat egg whites and bake in oven until nice and brown
- 1 c. fresh prepared or canned 1/4 pumpkin
- 2 c. milk
- 2 egg yolks
- 1/2 tsp. ginger
- 1/4 tsp. cloves
- Mix sugar, cornstarch, spices and salt together in heavy saucepan.
- Add pumpkin and milk; stir to blend well.
- Set over moderate heat and cook, stirring constantly, until thick and boiling.
- Beat egg yolks; add about half of the hot mixture gradually to egg yolks, stirring constantly.
- Return to pan and bring back to a boil, stirring constantly.
- Boil 1 minute.
- Remove from heat.
- Add marshmallows and stir until marshmallows are melted and mixture is blended.
- Cool, do not chill.
