Pumpkin Streusel Cake
- 1/2 c. packed brown sugar
- 1/2 c. finely chopped nuts
- 1 1/2 tsp. ground cinnamon
- 1 pkg. Betty Crocker SuperMoist spice cake mix
- 1/3 c. water
- 3 eggs
- 1/2 (16 oz.) can pumpkin (about 1 c.)
- 1 tsp. baking soda
- Heat oven to 350u0b0.
- Grease and flour rectangular pan, 13 x 9 x 2-inch.
- Mix brown sugar, nuts and cinnamon (reserve).
- Beat cake mix (dry), water, eggs, pumpkin and baking soda in large bowl on low speed, scraping bowl constantly, 30 seconds.
- Beat on medium speed, scraping bowl occasionally, 2 minutes.
- Spread half of the batter in pan; sprinkle with half of the reserved brown sugar mixture.
- Repeat with remaining batter and brown sugar mixture. Bake until cake springs back when touched lightly in center or when wooden pick inserted in center comes out clear.
- Bake for 35 to 40 minutes.
