Waldorf Pasta Salad
- 3/4 c. rotini or corkscrew macaroni, uncooked
- 1-1/4 tsp. salt, divided
- 2 Tbsp. oil
- 2 Tbsp. lemon juice
- 1 tsp. sugar
- 3/4 tsp. poppy seeds
- 1/4 tsp. dry mustard
- 1/4 c. chopped black walnuts
- 1 large red delicious apple, peeled or unpeeled and chopped
- 1 stalk celery, thinly sliced, or 1/4 tsp. celery seed
- 1/2 (10-oz.) block cheddar cheese, cut into bite size pieces
- 3 Tbsp. seedless raisins
- 1 c. chopped cooked chicken (optional)
- Cook macaroni
- according to package directions, using 1 teaspoon salt in water; drain and set aside.
- In a large bowl, combine oil, lemon juice, sugar, poppy seeds, mustard and remaining 1/4 teaspoon salt.
- Add drained macaroni, walnuts, apples, celery, cheese, raisins, and chicken, if desired.
- Toss to blend well.
- Serve with crackers.
