Zucchini Parmesan
- 1 lb. lean hamburger and 1 lb. Italian sausage (sweet, not hot) or all sausage or all hamburger
- 4 large zucchini, sliced thinly
- 2 large white onions, sliced in rings
- 1/2 lb. fresh mushrooms, sliced
- 1 c. shredded Monterey Jack cheese
- 1 can tomato sauce (large)
- 1 triangle fresh Parmesan cheese, grated
- Brown meat and sausage.
- Season with salt, pepper and garlic powder to taste. Drain well.
- In greased casserole dish, alternate layers, starting with meat sausage, zucchini, mushrooms, onions and cheese, ending with cheese on the final top layer.
- Pour tomato sauce over all, but don't use all (3/4 of a large can). Bake at 350u0b0 for 1 hour, uncovered.
- You can also substitute summer squash or eggplant for the zucchini.
