Galloping Gourmet'S Chicken
- 2 small chickens, cut up and skinned (if you prefer)
- 2 oz. olive oil
- salt and pepper
- 1 or 2 cloves chopped garlic
- 1 green pepper, cut into strips
- 1 red pepper, cut into strips
- 4 oz. chopped mushrooms
- 1 pepperoni, sliced thin
- 4 large, skinned and largely diced tomatoes or canned tomatoes
- 1 can sliced black olives (can omit)
- 6 oz. light dry wine (Sauterne)
- good handful chopped parsley
- If you are watching your fat grams, microwave the pepperoni on a plate covered with several paper towels for a minute or two to remove a lot of the fat.
- (Check frequently so that the pepperoni doesn't burn.)
- Saute the chopped garlic and sliced green and red peppers.
- Set aside.
