Pavlova(A Favorite Australian Dessert.)
- 4 egg whites
- 1 c. sugar
- 3 drops vanilla extract
- 1/4 tsp. cream of tartar
- pinch of salt
- 1 can fruit salad, drained
- kiwi and fresh strawberries (optional)
- 1 c. heavy cream
- Heat oven to 200u0b0.
- Beat egg whites with salt and cream of tartar until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and sugar is dissolved.
- Beat in vanilla extract.
- Cover a cookie sheet with brown paper or aluminum foil. Draw a 9-inch circle and spread meringue evenly within the lines.
- Make a slight hollow in the center for the filling. Bake for 1 hour.
- Turn off heat and let dry in oven at least 2 hours.
- When ready to serve, whip the cream until thick. Fold in fruit and fill center of Pavlova. Can garnish with strawberries and kiwi.
