Harold'S Sweet Potato Pie
- 1 to 1 1/2 c. cooked and mashed sweet potatoes (cut fresh peeled potatoes into 1-inch cubes and boil in water, drain well before mashing)
- 3/8 c. white sugar
- 3/8 c. dark brown sugar, packed
- 1/2 tsp. salt
- 2 1/2 tsp. pumpkin pie spice
- 1 tsp. vanilla extract
- 3 eggs, slightly beaten
- 1 1/4 c. whole milk
- 6 oz. canned evaporated milk
- Whisk together potatoes, sugars, salt, spice and vanilla. Blend in eggs and both milks.
- Place pie dish on baking sheet and carefully pour mixture into 9 or 10-inch pie shell.
- Bake at 375u0b0 for about one hour, periodically checking the pie crust doesn't burn.
- (Cover crust with foil if it browns too much.)
- Pie is done when fork inserted into center of pie comes out clean.
- Serve warm, with vanilla ice cream or whipped cream.
