Turkey Stuffing Casserole(Microwave)
- 1/3 c. margarine or butter
- 3 c. herb seasoned stuffing mix
- 1/4 c. water
- 1 (10 3/4 oz.) can condensed cream of mushroom or chicken or turkey soup
- 1 (10 oz.) pkg. frozen green peas
- 1/3 c. milk
- 2 tsp. minced onion (instant)
- 2 c. coarsely cut up cooked turkey or chicken
- 2 Tbsp. chopped pimiento
- In your microwave, place margarine in round 8 x 1 1/2-inch baking dish.
- Cover and microwave on High (100%) until melted, 45 to 60 seconds.
- Add stuffing and water.
- Toss to coat stuffing. Remove 1 cup stuffing.
- Spread remaining mixture evenly in baking dish.
- Mix soup, peas, milk and onion in 1 1/2-quart casserole. Cover tightly and microwave on High (100%) for 3 minutes.
- Stir. Cover and microwave until hot and bubbly, 3 to 4 minutes longer. Stir in turkey and pimiento.
- Spread mixture over stuffing in baking dish.
- Sprinkle with reserved stuffing mixture.
- Microwave, uncovered, on High (100%) until hot and bubbly, 7 to 9 minutes. Serve with cranberry relish and any remaining stuffing.
- Makes 6 servings.
