Fresh Apple Coffee Cake
- 4 c. unpeeled, finely chopped cooking apples
- 1/2 c. unsweetened orange juice, divided
- 1 1/2 tsp. cinnamon
- 1 c. sugar
- 1/2 c. oleo, softened
- 4 egg substitutes
- 1/4 c. skim milk
- 3 c. sifted cake flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2 1/2 tsp. vanilla
- 2 Tbsp. brown sugar
- vegetable cooking spray
- Combine apple, 1/4 cup orange juice and cinnamon.
- Set aside. Cream sugar and oleo until light and fluffy.
- Add egg substitute and blend well.
- Sift flour, baking powder and salt.
- Add to creamed mixture.
- Alternate with flour and milk; begin and end with flour.
- Add remainder of orange juice and vanilla.
- Pour 1/2 into 10-inch tube pan coated with cooking spray.
- Top with 1/2 apple mixture.
- Add remaining batter.
- Top with remaining apple mixture. Sprinkle brown sugar on top.
- Bake at 350u0b0 for 1 hour and 10 minutes.
- Cool 10 minutes.
- Remove from pan.
