Unbelievable Cheesecake

  1. In a large mixing bowl, beat together the cream cheese, sugar, lemon rind and lemon juice until the mixture is light and fluffy. Drain the mandarin oranges, saving the fruit and 1/2 cup of the juice.
  2. In a small saucepan over medium heat, add the milk. Carefully add the egg yolks, stirring constantly.
  3. Bring to a boil, then remove from the heat.
  4. Slowly beat the gelatin mixture into the cheese mixture.
  5. Stir in the sour cream.
  6. Beat the egg whites until they form soft peaks, then fold them into the cheese mixture. Arrange half the orange segments on the crust in a 9-inch spring-form pan.
  7. Pour the batter over the oranges.
  8. Refrigerate the cake for 4 hours or until set.
  9. Top the cake with whipped cream and the remaining orange segments.
