Owens' Peppers Rellenos
- 6 large bell peppers
- 1 lb. Owens hot sausage
- 1 lb. lean ground beef
- 2 eggs, beaten
- 1 c. chunky salsa (any brand)
- 1 tsp. garlic powder
- 2 c. tortilla chips, crumbled
- 1 large onion, diced
- 1 c. Monterey Jack cheese, cubed
- 1 c. sharp Cheddar, grated
- Preheat oven to 375u0b0.
- Cut off the tops of each bell pepper and set aside.
- Hollow out the inside of each pepper, discarding the seed and membrane.
- Take care not to puncture the outside skin.
- Combine in a large bowl the sausage, ground beef, eggs, salsa, garlic powder, tortilla chips, chopped onion and cubed cheese.
- Mix everything together well.
- Next, using a tablespoon, press the meat mixture into the bell peppers, not over-filling. Now sprinkle the grated cheese over the top of the meat in each bell pepper, put the tops on each pepper and bake for 45 minutes.
