Margaret'S Pound Cake
- 3 c. sugar
- 1 c. butter, softened
- 1/2 c. butter flavored vegetable shortening
- 5 eggs
- 3 c. plain flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/4 c. milk
- 1 tsp. vanilla
- 1 tsp. lemon flavor
- Cream sugar, butter and shortening together until smooth.
- Add eggs.
- Sift flour, baking powder and salt.
- Add to creamed mixture, blending just until dry ingredients are moistened.
- Add milk, vanilla and lemon flavoring.
- Pour batter into greased and floured 10-inch tube pan.
- Tap pan on flat surface several times to remove air bubbles from batter.
- Bake at 325u0b0 for 15 minutes.
- Reduce oven temperature to 275u0b0 and bake for 2 to 3 hours or until wooden pick inserted comes out clean.
- Cool in pan for 10 minutes, then remove and cool on wire racks.
- Yields 16 servings.
