Chili Con Carne
- 1 lb. hot Italian sausage
- 1 clove garlic, minced
- 1 c. onion, chopped
- 1 large can tomato sauce
- 1 large can chili beans
- 1 small can Ro-Tel tomatoes with green chilies
- 1 1/2 tsp. salt
- 1/2 tsp. celery salt
- 1 1/2 Tbsp. chili powder
- 1/8 tsp. thyme
- 1/8 tsp. marjoram
- few grains cayenne pepper
- water
- Chop up Italian sausage with fork in frying pan.
- Saute until it turns brown.
- Add onion and garlic.
- Saute until onion is transparent.
- Drain mixture on paper towels.
- Pat with towels on top to absorb grease.
- Put mixture in soup pan; add rest of ingredients, including spices.
- Simmer for 1 1/2 to 2 hours, adding water as needed.
