Company Bread Pudding
- 2 beaten egg yolks
- 1 (12 oz.) carton (1 1/2 c.) cream-style cottage cheese
- 3/4 c. milk
- 3/4 c. sugar
- 2 Tbsp. butter or margarine, melted
- 1/2 tsp. ground allspice
- 1/4 tsp. mace
- 1/8 tsp. cloves
- 2 c. soft bread cubes (3 slices)
- 1/2 c. raisins
- 1/2 c. whole cranberry sauce
- 2 egg whites
- In large mixing bowl, combine egg yolks, cottage cheese, milk, 1/2 cup of the sugar, the butter or margarine, allspice, mace, cloves and 1/4 teaspoon salt.
- Stir in bread cubes and raisins. Turn into 8 x 1 1/2-inch round baking dish.
- Spoon cranberry sauce atop.
- Beat egg whites until peaks form (tips curl over). Gradually add the remaining 1/4 cup sugar, beating until stiff peaks form (tips stand straight).
- Spread over cranberry sauce. Bake in 325u0b0 oven for 40 to 45 minutes.
- Makes 6 servings.
