Lo-Cal Fruit Trifle
- 2 pkg. (4 envelopes) D-Zerta whipped topping
- 1 pkg. diet vanilla pudding (not instant)
- 1 can unsweetened Mandarin oranges, drained
- rum extract
- 1 large can low calorie fruit cocktail, drained
- 1 large can unsweetened pineapple chunks, drained
- 1 sponge cake or 1/2 angel cake
- sherry wine (optional)
- Prepare according to package directions.
- Refrigerate for a short time so whipped topping will harden.
- Break cake into small pieces; place in a large glass bowl.
- Dribble a little sherry over the pieces of cake, if desired.
- Prepare the vanilla pudding according to package directions.
- Add a few drops of rum extract to the pudding.
- Pour slightly thickened pudding from the pan on top of the cake pieces in the bowl.
