Easy Perfection Salad
- 2 (3 oz.) pkg. lemon flavored jello
- 2 c. boiling water
- 1 Tbsp. vinegar
- 6 or 7 small green onions, snipped
- 1 small jar pimentos
- 1 lb. can sauerkraut
- Place contents of jello in 8 1/2 x 4 1/2 x 2 1/2-inch loaf dish.
- Add 2 cups boiling water and stir to dissolve gelatin.
- Add vinegar and 12 to 15 ice cubes.
- Stir constantly until gelatin begins to thicken (about 3 minutes).
- Remove any unmelted ice. Snip into partially set gelatin the tops of 6 or 7 small green onions and add pimentos.
- Cut through the contents of one can of sauerkraut to gelatin.
- Stir gently to distribute vegetables. Chill until set (about 4 hours or overnight).
- Unmold onto crisp greens on a serving platter.
- Garnish.
- May serve with horseradish mayo.
- Stir 1 teaspoon horseradish into 1 cup mayonnaise as dressing.
- Serves 8 to 10.
