Easy Perfection Salad

  1. Place contents of jello in 8 1/2 x 4 1/2 x 2 1/2-inch loaf dish.
  2. Add 2 cups boiling water and stir to dissolve gelatin.
  3. Add vinegar and 12 to 15 ice cubes.
  4. Stir constantly until gelatin begins to thicken (about 3 minutes).
  5. Remove any unmelted ice. Snip into partially set gelatin the tops of 6 or 7 small green onions and add pimentos.
  6. Cut through the contents of one can of sauerkraut to gelatin.
  7. Stir gently to distribute vegetables. Chill until set (about 4 hours or overnight).
  8. Unmold onto crisp greens on a serving platter.
  9. Garnish.
  10. May serve with horseradish mayo.
  11. Stir 1 teaspoon horseradish into 1 cup mayonnaise as dressing.
  12. Serves 8 to 10.
